Switching to a fine-edge blade meant the knife would dull quickly when used to cut against the ceramic or glass plate. Shun created the Ultimate Steak knife to answer this steak-knife quandary. The Ultimate Steak knife has both a 16 blade angle and a low-frequency serration. It slices a steak cleanly and beautifully, yet without dulling the knife prematurely, because only the tips of the serrations touch the plate. The result is a delicious, juicy bite of steak, and amazing edge retention.
